A-Z Smoothie (makes 2 servings)
Ingredients:
1/4 cup fresh baby spinach leaves
2/3 cup cold water
2 teaspoons ground flax seeds
2/3 cup frozen raspberries
1 peeled banana
2 teaspoons creamy, unsalted almond butter 1 teaspoon lemon juice
Directions:
1. Place all ingredients into a blender
2. Puree until smooth.
3. Serve immediately, serving size is 8 oz.
Mango Smoothie (makes 2 servings)
Ingredients:
1/4 cup skim milk
1/4 cup apple juice
8 ounces (1 cup) low-fat vanilla yogurt 1/4 cup frozen mango chunks
2 tablespoons ground flax seeds
Directions:
1. Place all ingredients into a blender,
2. Puree until smooth.
3. Serve immediately, serving size is 8 oz.

Ingredients:
- 1/2 medium peeled, seeded, coarsely chopped cantaloupe (about 12 ounces)
- 1/4 medium peeled, seeded, coarsely chopped honeydew (about 12 ounces)
- 1 tbsp. fresh lime juice
- 1/4 tsp. fresh grated ginger
- mint sprigs (optional)
Directions:
- In the blender or food processor, purée the cantaloupe and add half of the lime juice and half of the ginger. Place in a bowl.
- Rinse out the blender or food processor. Purée the honeydew in the blender, add the remaining lime juice and ginger.
- Simultaneously pour 1/2 cup of each melon mixture into opposite sides of a soup bowl.
- Garnish each serving with a mint sprig if using. Serving size is 1 cup.
Watermelon Jicama Salad (makes 10 servings)
Ingredients:
- 5 cups watermelon (about 1/2 watermelon), cut into 1-inch batonnets (1/4” x 1/4” x 2” strips)
- 1 jicama, julienned
- 1/2 tsp. paprika
- 1/4 cup honey
- 2 tbsp. lemon juice
- 2 tbsp. lime juice
- 1/4 tsp. sea salt
- 1/4 cup toasted pumpkin seeds, garnish
Directions:
- In a mixing bowl, combine watermelon and jicama.
- In a separate bowl, mix remaining ingredients, drizzle dressings over watermelon.
- Toss gently, sprinkle with pumpkin seeds and serve.
- Serving size is 1/2 cup.
