One of the downsides to fresh produce is that it doesn’t last long. Some fruits and vegetables (like berries, peaches, asparagus, and leafy greens) have shelf lives of less than a week!
Knowing how to preserve your fruits and vegetables can help them last longer and stay fresh.
Your Action for Today
Learn and implement 1 new method for preserving your produce, such as:
- Giving your berries a vinegar bath: Rinse berries in a solution of 1 part vinegar to 3 parts water. Rinse again with water and dry thoroughly.
- Using lemon juice to keep apple slices fresh: Toss them in a mixture of water and a few teaspoons of lemon juice.
- Blanching and freezing vegetables: Boil them for a few minutes, then plunge them into ice water. Dry them thoroughly, then freeze them in a single layer on a baking sheet before transferring them to airtight bags.
- Storing leafy greens with paper towels: After washing and drying leafy greens, store them in the refrigerator wrapped in paper towels.
